The issue i have is the jam does not match with the drywall.
Door casing not flush with drywall.
The baseboard will be flush with the 5 8 inch drywall so prep happens first.
Adding wood around the door frame seems a legit way to do it actually.
In some places it is even but mostly it is 1 4 1 2 below the drywall grade.

I d suggest that you put the door casing on the door frame as if it was normal then use a piece of quarter round to hide the side of the casing.
And the stop and the strike plate should be correctly aligned so the door s latch easily clicks into the hole in the strike plate when the door closes.
